Harira is a traditional Moroccan soup. It is made with chickpeas and lentils, so it is very filling. Serve with warm crusty bread for a hearty meal.

Ingredients

Quantity Ingredient
oil, for cooking
1 onion, diced
2 celery stalks, diced
1 carrot, diced
pinch saffron, (optional)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon harissa paste
750ml vegetable or chicken stock
125ml tomato purée
salt and freshly ground black pepper
400g tinned chickpeas, rinsed and drained
420g tinned lentils, rinsed and drained
3 tablespoons chopped coriander leaves

Method

  1. Heat a large heavy-based saucepan over medium–high heat. Add a splash of oil and the onion, celery and carrot and cook for 5–6 minutes, stirring often, until softened.
  2. Add the saffron, if using, with the spices and harissa paste and cook for 2–3 minutes, or until fragrant. Add the stock and tomato purée and bring to the boil. Season with salt and pepper, then reduce the heat and simmer for 15–20 minutes, stirring often.
  3. Stir in the chickpeas, lentils and coriander, check the seasoning and serve.

Variation

  • Harira with chorizo

    Add 1 diced chorizo sausage along with the onions.
