Many people think they don’t like tofu because they have been served the hard, rubbery stuff. These days most tofu is softer and very easy to cook with. Silken tofu is especially delicious, but needs careful handling or it will break apart.

Ingredients

Quantity Ingredient
1.5 litres vegetable stock
2 tablespoons miso paste
2 tablespoons tamari
200g broccolini, trimmed and cut into bite-sized pieces
180g udon noodles
400g tofu, diced into 1 cm chunks
2 spring onions, sliced
1 small handful coriander leaves

Method

  1. Pour the stock into a large heavy-based saucepan and bring to the boil over high heat. Mix the miso paste and tamari together and add to the boiling stock.
  2. Add the broccolini and noodles and simmer for 1–2 minutes. Add the tofu and spring onions and heat through. Serve in bowls, garnished with the coriander leaves.

Variation

  • Tofu, asparagus and soba noodle soup

    Swap udon noodles for soba noodles and cook for about 5 minutes, or until tender. Substitute broccolini for chopped asparagus and cook for 1–2 minutes.
