There are several tricks to successful stir-frying. The first trick to stirfrying is to ensure everything is prepared and ready to go before you start cooking. The second trick is to not overload the wok. Ideally you would cook for 2–3 people at a time. Any more than this and the wok struggles to retain its heat and you end up stewing rather than stir-frying. Trick number three is stir-frying is actually two cooking methods: the initial frying part and then covering the wok with a lid to steam. This ensures the ingredients cook through. Lastly, keep your stir-fry simple.
