This dish really packs a punch in the flavour department. serve with steamed rice or spoon the hot mixture into lettuce leaves.

Ingredients

Quantity Ingredient
2 tablespoons jasmine rice
oil, for cooking
500g minced chicken
1 lemongrass stem, finely chopped, white part only
2 green chillies, finely chopped
1/2 small red onion, thinly sliced
1 kaffir lime leaf, finely shredded
or 1 lime, finely grated zested
2 tablespoons lime juice
1 tablespoon fish sauce
1 teaspoon grated palm sugar
1 small handful coriander leaves
80g roasted peanuts, finely chopped
iceberg lettuce leaves, to serve
