Ingredients

Quantity Ingredient
200g rice noodles
2 tablespoons peanut oil
2 eggs, lightly beaten
2 skinless chicken breast fillets, thinly sliced
3 spring onions, thinly sliced
1 garlic clove, crushed
2 small red chillies, seeded and finely diced
2 tablespoons fish sauce
1 tablespoon grated palm sugar
120g bean sprouts
2 tablespoons chicken stock or water
coriander leaves, to serve
50g roasted peanuts, coarsely chopped
lime wedges, to serve

Method

  1. Put the kettle on to boil. Pour boiling water over the rice noodles in a large bowl and set aside.
  2. Place a wok over high heat. Add a splash of peanut oil, then the egg. Swirl well to coat the sides of the wok with the egg mixture. Cook briefly, then lift one edge away from the wok and roll up the omelette. Tip onto a chopping board and allow to cool.
  3. Return the wok to the heat. Add another splash of oil if necessary, then add the chicken and cook until golden brown. Add the spring onions, garlic and chilli. Cook for 1–2 minutes or until fragrant, stirring often to avoid burning. Drain the noodles and add them to the wok, along with the fish sauce, palm sugar and bean sprouts. Add a splash of stock or water, cover with a lid and steam for 2–3 minutes.
  4. Slice the omelette thinly and add to the wok. Toss the ingredients to combine. Sprinkle with the coriander leaves and crushed peanuts and serve with the lime wedges.
