Kaffir lime leaves add an extra citrus zing to this dish. if they are hard to find, then the lime juice still perks up the dish beautifully.

Ingredients

Quantity Ingredient
400g beef eye fillet
1 tablespoon peanut oil
200g baby bok choy, leaves separated and washed
2 kaffir lime leaves, shredded, (optional)
3 tablespoons sweet chilli sauce
3 tablespoons soy sauce
3 spring onions, finely chopped
100g roasted peanuts, (optional)
1 lime, juiced

Method

  1. Cut the eye fillet into 1 cm slices then cut each slice into 1 cm strips.
  2. Heat a wok over high heat. Add the oil and swirl it around the wok. Add the beef, toss well and cook for 2–3 minutes, or until well browned.
  3. Add the bok choy and the lime leaves, if using. Stir well, then add the chilli sauce, soy sauce, spring onions and the peanuts, if using. Allow to heat through, then finish with a squeeze of lime juice and serve immediately with steamed rice.
