Ingredients

Quantity Ingredient
oil, for cooking
2 teaspoons grated root ginger
1 garlic clove, crushed
1 small red chilli, seeded and diced
4 spring onions, sliced
80g cashews
400g beef eye fillet, thinly sliced
300g asparagus, woody ends trimmed and cut into 3 cm pieces
2 tablespoons vegetable stock or water
2 tablespoons soy sauce

Method

  1. Place a wok over high heat. Add a splash of oil, then the ginger, garlic, chilli, spring onion and cashews. Cook for 1–2 minutes until fragrant, stirring often to avoid burning.
  2. Add the steak and stir-fry until browned all over. Add the asparagus and stock, cover with a lid and steam for 2–3 minutes. Add the soy sauce to season and serve with steamed rice.

Variation

  • Soy chicken with asparagus and cashews

    Swap beef for chicken breast fillet.
