Ingredients

Quantity Ingredient
180g soba noodles
2-3 tablespoons peanut oil
3 spring onions, sliced
1 garlic clove, crushed
2 teaspoons grated root ginger
2 small red chillies, seeded and diced
250g raw prawns, peeled and deveined
100g snow peas, strings removed
1 tablespoon fish sauce
2 tablespoons soy sauce
150g bean sprouts
lime wedges, to serve

Method

  1. Cook the soba noodles in a saucepan of boiling water for 3–4 minutes. Drain and refresh under cold water, then set aside until needed.
  2. Place a wok over high heat. Add the oil, spring onions, garlic, ginger and chillies. Cook for 1 minute, stirring often to avoid burning. Add the prawns and cook for 1 minute. Add the snow peas and a small ladle of water. Cover and cook for 2 minutes.
  3. Drain the noodles and add to the wok with the fish sauce and soy sauce. Stir for 3–4 minutes, or until heated through. Add the bean sprouts and serve immediately with the lime wedges.
