Ingredients

Quantity Ingredient
5 garlic cloves
squeeze lemon juice
200g butter, softened
40g flat-leaf parsley, leaves picked and finely chopped

Method

  1. In a small food processor, or mortar and pestle, blend the garlic with a pinch of salt to a paste. Add the lemon juice and butter and process to combine. Fold through the parsley and season with salt and freshly ground black pepper. Roll into a cylinder in plastic wrap and store in the freezer.
