Ingredients

Quantity Ingredient
250g butter
1/4 bunch oregano, leaves picked and roughly chopped
1 lime
1 garlic clove

Method

  1. Method 1: Put the butter, oregano, a squeeze of lime juice, half the garlic clove (crushed) and a pinch of salt in a mortar and grind with a pestle or press with a wooden spoon.
  2. Roll into a cylinder in plastic wrap, label well and store in the freezer.

Method

  1. Method 2: Using a slow juicer, juice half the oregano, the the flesh of half the lime and the garlic clove. Fold this mixture through the butter and add a pinch of salt. Then I like to chop the remaining oregano leaves and fold them through the butter.
  2. Roll into a cylinder in plastic wrap, label well and store in the freezer.
