Ingredients

Quantity Ingredient
1 bunch sorrel
130g butter, softened
1 lemon, juiced
1/2 garlic clove, finely chopped

Method

  1. Sorrel goes black in its raw state, so first sauté the leaves in 5 g of the butter in a frying pan over medium heat for 1 minute until wilted. Remove from the heat and allow to cool.
  2. In a blender, process the sorrel with the remaining butter, lemon juice, garlic and a pinch of salt, until the mixture is bright green. Roll into a cylinder shape in plastic wrap and store in the freezer.
