No competition, at the top of the list for most beloved cocktail by staff. Mezcal, when used properly, makes alcoholic magic.

Ingredients

Quantity Ingredient
60ml mezcal
45ml lemon juice
15ml st germain elderfl‡ower liqueur
15ml thyme syrup
ice cubes
lemon twist, garnish (optional)

Thyme syrup

Quantity Ingredient
220g sugar
3 thyme sprigs, plus extra, for garnish (optional)

Method

  1. To make the thyme syrup, place the sugar, thyme and 250 ml water in a small saucepan and bring to the boil. Reduce the heat to low and simmer until the sugar is completely dissolved. Set aside to cool, then pour into a glass bottle, leaving the thyme in the syrup to infuse. The longer you leave it, the stronger the flavour will be.
  2. Add all of the ingredients to a cocktail shaker, then fill with ice and shake. Double strain into a short glass.
  3. Garnish with a classic lemon twist and a sprig of thyme, if desired.
