Fire-roasted tomato & chipotle salsa

Ingredients

Quantity Ingredient
5 tomatoes
1 red onion, halved
2 garlic cloves, peeled
2 chipotles in adobo
2 tablespoons adobo sauce
large handful coriander, roughly chopped
1 lime, juiced

Method

  1. Heat a chargrill pan or barbecue over high heat and grill the tomatoes and onion until lightly blackened all over.
  2. Transfer to a food processor along with the remaining ingredients. Season with salt and pepper and pulse until you have a slightly chunky salsa.
