Gran’s madelines are not French ‘madeleines’, but delicious jelly versions of the English jam madeline.

Ingredients

Quantity Ingredient
1/2 packet jelly crystals
3/4 cup hot water
55g butter
55g sugar
1 egg
55g flour
1 teaspoon baking powder
1 tablespoon milk
coconut

Method

  1. Dissolve jelly crystals into hot water, set aside to cool. Cream butter and sugar, drop in egg and beat well. Fold in sifted flour and baking powder, then add milk. Mix until just combined. Bake in 6 small greased moulds for 20 minutes at 200°C. Turn out, brush with cool jelly, and sprinkle with coconut.
