Ingredients

Quantity Ingredient
270g plain
45g icing sugar
50g lard
1 whole egg
1 egg yolk
5g red wine vinegar
1 egg white, lightly beaten
oil, for deep-frying

Method

  1. To make the cannoli dough, process the flour, icing sugar and lard in a food processor until the mixture resembles fine breadcrumbs. Add the egg, egg yolk and red wine vinegar. Process until the mixture just starts to come together. Turn out onto a clean, lightly floured surface and knead until just smooth. Cover in plastic wrap and place in the fridge to rest for 1 hour.
  2. Using a rolling pin, roll out the dough to a 2 mm thickness, then cut the dough into 9 cm squares. Wrap each square of dough around a metal cannoli tube so the opposite corners overlap. Brush the overlapping corners with egg white to seal (do not get any egg white on the cannoli tube or the dough will stick).
  3. Pour enough oil into a saucepan to reach a depth of 8 cm. Heat the oil over a medium– high heat until the oil reaches 180°C. Working in batches, deep-fry the tubes for 2 to 3 minutes, or until lightly golden.
  4. Remove with kitchen tongs and place on a plate lined with paper towel. Cool slightly. Remove the cannoli shells from the tubes. Return the cannoli shells to the oil and deep-fry for a further 1 minute, or until golden brown. Transfer to the plate to cool. This recipe will make more than you need for the gelato; store any leftover shells in an airtight container for another use.
