Don’t fear the avocado! After this pudding has had time to rest you won’t even notice it’s hiding in there!

Ingredients

Quantity Ingredient
100g ripe avocado
1 teaspoon vanilla extract
25g cacao powder
120g soft medjool dates, pitted
crushed peanuts, to serve
fresh strawberries, to serve

Method

  1. Mix all the ingredients (except the garnishes) in a high-speed blender or food processor until completely smooth.
  2. Transfer to a small bowl and refrigerate for at least 3 hours.
  3. Scoop into bowls and garnish with the crushed nuts and fresh strawberries, or toppings of your choice!

Note

  • You can add a tablespoon of almond butter if you want an extra-creamy pudding.
