Mango, turmeric and ginger pudding

Ingredients

Quantity Ingredient
150g frozen mango
1/2 teaspoon ground ginger
1/4 teaspoon ground turmeric
300ml plant-based milk
50g medjool dates, pitted
30g cashew nut butter
1 teaspoon vanilla extract
60g chia seeds
pistachios, chopped, to serve
fresh raspberries, to serve

Method

  1. Mix the frozen mango, ginger, turmeric, milk, dates, cashew nut butter and vanilla in a high-speed blender until smooth.
  2. Transfer to an airtight container and add the chia seeds. Mix well. Cover and refrigerate overnight to set.
  3. The next day, spoon the pudding into serving bowls and top with chopped pistachios and fresh raspberries. Enjoy!
