Ingredients

Quantity Ingredient
140g unsweetened desiccated coconut
140g medjool dates, pitted
200g dry-roasted unsalted cashew nuts
20g coconut oil, softened
30g cacao powder
25ml sweet rum
50g raisins

Method

  1. Blend 100 g of the desiccated coconut with all the remaining ingredients except the raisins in a food processor until the mixture is combined and starts to stick together. Transfer to a large bowl and fold in the raisins.
  2. Take a tablespoon of the mixture, form it into a ball and roll it in the remaining coconut. Repeat with the remaining mixture.
  3. Transfer the treats to an airtight container and refrigerate for 1 hour to set.
  4. They can last in an airtight container in the fridge for up to 1 week or in the freezer for up to 2 months.

Note

  • For a nut-free variation, you can replace the cashew nuts with gluten-free arrowroot biscuits.
