Ingredients

Quantity Ingredient
250g full-fat single cream
250g thick cream
200g stilton
freshly ground pepper
1/4 bunch chives

Method

  1. Mix the 2 creams together in a saucepan, place over a gentle heat, stir and allow to reduce slowly by half until you have a thick smooth consistency. Crumble in the Stilton and stir until it melts. Season with black pepper.
  2. Before serving, sprinkle with chopped chives. The sauce is best served immediately, but can be kept in the fridge and reheated gently before serving.
