Ingredients

2 golden delicious apples
40g caster sugar
45g butter
100g muscovado sugar
100g water
4 tablespoons thick creme fraiche
4 thick slices brioche

French toast mixture

300ml milk
160g single cream
1/2 vanilla pod
25g caster sugar
2 eggs

Method

  1. Peel the apples, remove the cores and cut into large pieces.
  2. Put the caster sugar into a frying pan and stir over a medium heat until completely melted. When the sugar begins to caramelize, add 30 g of the butter and let it melt. Add the apples and cook for 5 minutes without stirring, then stir to coat the apples and continue to cook 10 minutes over a fairly low heat.
  3. Whisk together in a bowl all the ingredients for the French toast mixture.
  4. Make a caramel with muscovado sugar and water: put in a saucepan and cook until you have a nice thick syrup.
  5. Soak the slices of brioche in the muscovado caramel for 10 minutes. Heat the remaining butter in a frying pan; when it foams, put in the slices of brioche. Fry the brioche and when one side is nice and golden, turn it over to brown the other. Do this in several batches if the frying pan is not big enough to do them all at once.
  6. Arrange a slice of brioche on each plate. Add a spoonful of crème fraîche, some chunks of apple, and pour over the muscovado sugar caramel (reheat if it has gone too hard).
