Ingredients

Quantity Ingredient
15g pecans
15g cashew nuts
15g hazelnuts
100g mixed cereal flakes
40g maple syrup, plus a little for decoration
40g corn syrup or agave syrup
1 pineapple
1 mango
2 kiwi fruits
2 bananas
4 creamy yoghurts
2 passion fruits
40g dried cranberries
15g coconut flakes
a few small shortbread biscuits, to serve (optional)

Method

  1. Preheat the oven to 140°C. Crush all of the nuts and mix with the cereal flakes.
  2. Heat the maple syrup with the corn syrup gently in a small saucepan. Pour over the cereal and nut mixture, and stir until coated. Spread this mixture on a baking tray covered with greaseproof paper and bake in the oven for 45 minutes. Allow to cool (it will keep for several days in an airtight container).
  3. To serve, peel the pineapple, mango, kiwi fruits and bananas, then cut into cubes. Put yoghurt in the bottom of 4 bowls, arrange the fruit cubes, sprinkle with granola, add the pulp of the passion fruits (cut them in half and scoop out the pulp with a spoon). Add a little maple syrup, the cranberries, coconut flakes, and the shortbread biscuits.
