Ingredients

Quantity Ingredient
120g plain flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
30g caster sugar
pinch salt
240g buttermilk
1 large egg
50g butter
maple syrup

Method

  1. Mix all the dry ingredients together in a large bowl. In a separate bowl, whisk the buttermilk and egg together. Pour this into the dry mixture and stir gently to combine the ingredients without working them too much. Leave to rest at room temperature for 30 minutes.
  2. Heat a large non-stick frying pan over a medium heat, drop in a knob of butter and pour in small ladlefuls of the batter to form pancakes. The batter should immediately start to brown.
  3. As soon as small bubbles begin to form on the surface, flip the pancake over and cook for a further minute or so, to brown the other side. Remove from the pan and pile on a warm plate with a little bit of butter on each pancake; keep warm under aluminium foil. Butter the frying pan again and continue with the rest of the batter. Serve with butter and maple syrup.
