Ingredients

50ml tequila
25ml agave syrup
20ml lime juice
5ml cucumber juice
5ml green chartreuse
3 dashes mezcal, infused with coriander and dried red chilli peppers, (see note)
20ml egg white
crushed ice

Method

  1. Pour all the ingredients except the ice into the shaker and shake once vigorously to create the egg white emulsion, a technique known as dry shaking.
  2. Then fill with as much ice as you can and shake again until frost appears on the surface of the metal tumbler. Pour into a chilled cocktail glass and decorate with a slice of cucumber.
  3. Something of a cross between a Tommy’s Margarita and a Tequila Sour, this is a very fresh, slightly acidic and spicy cocktail suitable for any occasion.

Note

  • Place the ingredients in the bottle and leave to infuse; the longer you leave it the stronger the flavour
