Ingredients

8 golden delicious apples
150g caster sugar
120ml water
1/2 lemon, juiced
1 roll puff pastry
150g butter

Method

  1. Peel 4 of the apples, remove the cores and cut into slices. Put in a saucepan with 50 g of the sugar, the water and lemon juice. Allow to stew on a very low heat for 2 hours then stir.
  2. Roll out the pastry and cut into 15 cm diameter discs. Prick with a fork and put 1 tablespoon of apple compote on each one.
  3. Peel the other 4 apples, remove the cores and cut into thin slices about 2 mm thick. Arrange them attractively in a circular pattern on the tartlet bases.
  4. Clarify the butter by melting it gently; when it boils, skim off the foam on the surface. Brush the tarts with clarified butter and sprinkle with some of the remaining sugar.
  5. Put the tarts in the oven at 180°C for about 30 minutes. Midway through the baking, take them out and brush again with butter and the rest of the sugar.
