Ingredients

Quantity Ingredient
1 beef heart, prepared by the butcher, cut into approx. 40 g pieces

The marinade

Quantity Ingredient
100g aji panca puree
or 50g harissa + 50 g tomato puree
1 tablespoon chopped garlic
2 tablespoons fresh oregano
4 tablespoons red wine vinegar
1 heaped teaspoon ground cumin
2 teaspoons salt
4 tablespoons grapeseed oil

Method

  1. Mix all the ingredients for the marinade together in a large bowl.
  2. Put the pieces of heart in the marinade, cover with cling film (plastic wrap) and chill for 12 hours.
  3. Make 12 kebabs and grill on the barbecue for 3 minutes each side to cook them medium rare.
