Marinated beef fillet with sesame seeds

Ingredients

Quantity Ingredient
300g beef fillet
400g coarse salt
200g sugar
1 tablespoon grapeseed oil

The garnish

Quantity Ingredient
1/2 bunch chives
1 tablespoon white sesame seeds
1 lemon, juiced
1 bundle enoki mushrooms

The sauce

Quantity Ingredient
1 tablespoon black sesame sauce
4 tablespoons sesame oil

Method

  1. Put the fillet in a deep dish and cover with the sugar and salt mixed together. Cover with cling film(plastic wrap) and leave to marinate in a cold place for 24 hours. Rinse the fillet well and wipe dry with kitchen paper.
  2. Fry the beef in the grapeseed oil for a few minutes over a high heat. The idea is to sear but not cook the meat; it should remain raw inside. Cover with cling film (plastic wrap) and put in the fridge for 2 hours.
  3. In the meantime, mix the sauce ingredients together in a small bowl. Snip the chives.
  4. When it is time to serve, cut very fine slices of fillet, drizzle with sauce, sprinkle with sesame seeds and chives, drizzle with lemon juice and accompany with the small raw mushrooms.
