Ingredients

Quantity Ingredient
4 large very ripe tomatoes
1 sweet onion
2 sprigs thyme
2 bay leaves
1 tablespoon tomato puree
100ml olive oil
salt
pepper

Method

  1. Remove the stalks from the tomatoes and chop them with the skin on. Sweat the onion gently in the olive oil until transparent with the thyme, bay leaves and tomato purée. Brown then add the chopped tomatoes. Continue to cook for about 10 minutes. Do not cook for too long so that you keep the sauce as fresh as possible.
  2. Add the olive oil and season.
