Ingredients

Quantity Ingredient
1kg medium-sized white mushrooms
3 tablespoons olive oil
4 tablespoons Parsley butter
sea salt
freshly ground black pepper

Method

  1. Wash the mushrooms under a running tap briefly and remove the stems. (You can keep the stems to add to a stock.) Fry the mushrooms in olive oil for a few minutes to brown slightly, then season.
  2. Add the parsley butter to the frying pan and toss the mushrooms in it to coat well. Season again if necessary (taste first as the butter is salted) and serve.
