The dumplings

Ingredients

1 large shallot
1 onion
1 garlic clove
sea salt
freshly ground black pepper
1 tablespoon olive oil
300g beef stock
1/2 bunch parsley
1/2 bunch chives
flour, for dusting
8 sheets chinese dumpling pastry
1 egg yolk

The broth

1/2 litre beef stock
A pinch saffron threads
100g diced beef marrow

Method

  1. First make the dumplings. Peel and finely slice the shallot, onion and garlic, then sweat in a frying pan with olive oil for 10 minutes over a medium to low heat.
  2. Shred the beef cheeks, chop the herbs and mix with the onion, shallot and garlic. Season. Cover and leave this stuffing to rest in the fridge for 3 hours.
  3. Sprinkle your worktop with flour. Place a sheet of dumpling pastry on it, put a little stuffing in the middle, brush the edges with egg yolk and stick a second sheet of pastry on top to close it. Get rid of as much air as possible around the stuffing so that the dumpling doesn’t burst on cooking. Cut off any excess pastry around the stuffing, leaving a small margin around the edge to keep the stuffing in.
  4. Repeat the same process for the other dumplings.
  5. For the broth, cut the stock vegetables into dice and add them to the stock. Reheat then add the saffron and marrow and stir well.
  6. Place one dumpling in each soup dish. Pour over the vegetable and marrow broth and serve hot.
