Marrow bones stuffed with cheek and foie gras

Ingredients

2 beef cheeks
2 carrots
1 stick celery
1 onion
3 tablespoons olive oil
2 garlic cloves
1 bouquet garni
200ml Beef marrow stock in red wine, Beef stock only
1/2 litre full-bodied red wine, such as Côtes-du-Rhône or Languedoc
6 marrow bones, 8 cm tall, nice and broad (ask your butcher for them)
1/2 bunch chives
1/2 bunch chervil
2 slices foie gras

Method

  1. The day before you wish to serve this dish, soak the beef cheeks in a large bowl filled with cold water for 24 hours.
  2. Change the water several times until it is clear (there should be no more blood or impurities in it).
  3. Chop the carrots, celery and onion into small dice of around 2 mm.
  4. Sweat them in olive oil for a few minutes. Chop the garlic and add to the casserole dish to colour for about 1 minute.
  5. Add the bouquet garni, the cheeks, the beef stock and wine. Cook on a very low heat for 3 hours. Add water if needed.
  6. Meanwhile, blanch the marrow bones in simmering salted water for 8 minutes. Cool them in iced water. Take out the marrow and chill.
  7. Put the empty bones back on the stove and cook in boiling water for 1 hour 30 minutes. This cleans them well and removes any impurities. Brush them clean.
  8. When the cheeks are nice and tender, break them up with a fork in the casserole dish. Take out the bouquet garni and reduce the liquid as much as possible to obtain a nice thick texture. Chill until needed.
  9. Once the cheeks are cooked, chop the herbs and cut the foie gras into dice. Add them to the stewed cheek. Reheat gently to combine the mixture.
  10. Stuff the marrow bones with the beef cheek mixture and, just before serving, pop them in the oven for 10 minutes at 160°C. Serve with a salad accompaniment.

  • The marrow can be used to make Beef Cheek Dumplings.
