You can make this cake entirely in a food processor. It is an excellent all-purpose cake that can be dressed up for special occasions. Slice it through the middle horizontally and fill it with jam, fresh berries, cream or serve it with coffee crème anglaise – whatever you fancy. Top with ganache or dust with cocoa powder.

Ingredients

250g unsalted butter, melted
200g caster sugar
250g good quality dark chocolate
250ml strong espresso coffee, freshly made
2 eggs
2 teaspoons vanilla essence
200g self-raising flour
50g cocoa powder

Method

  1. Preheat the oven to 180ºC and grease and line a 23 cm spring-form cake tin.
  2. Combine the butter, sugar, chocolate and hot coffee in a food processor and whiz until the sugar has dissolved and chocolate has completely melted.
  3. Add the eggs and vanilla and whiz briefly.
  4. Sift the flour with the cocoa and add to the bowl. Whiz until smooth. Spoon the cake batter into the cake tin and bake for 40 minutes, or until cooked.
