Ingredients

Quantity Ingredient
1/2 cup mixed berries, either fresh or frozen
1/2 lemon, peeled
1/2 vanilla bean, split lengthways and seeds scraped
1 teaspoon coconut sugar

Method

  1. Combine all the ingredients in a bowl and marinate at room temperature for 1 hour. This should be sufficient time for the coconut sugar to dissolve and the fruit to take on hints of citrus and vanilla. Remove the lemon peel when serving.
  2. This compote can be stored in an airtight container in the fridge for 3–4 days.
