This well-known cheese spread is much loved by Hungarians and Jews alike. It originated in the county of Lipto in northern Hungary, where the famous sheep’s curd cheese of the region is mixed with softened butter, grated onion, paprika and caraway seeds. Variations of this dish are made all over Central Europe – some cooks like to add a little prepared mustard. In Vienna, where it is called liptauer, chives and capers are often added. Serve with quarters of rye bread or toast, or as a dip for raw vegetables.

Ingredients

Quantity Ingredient
225g cottage cheese
6 tablespoons softened butter
2 tablespoons sour cream
2 tablespoons finely grated onion
1 tablespoon hungarian paprika
1/2 teaspoon ground caraway seeds
salt
freshly ground black pepper

Method

  1. Sieve the cheese into a bowl, add the softened butter and sour cream and combine thoroughly. Add the onion, paprika and caraway and mix well. Season with salt and pepper, then refrigerate for 2–3 hours to let the fl„avours blend.
