This simple salad makes a delicious appetizer or a light lunch with some bread on the side.

Ingredients

Quantity Ingredient
450g tomatoes, diced
1 small red onion, thinly sliced
100g black olives, pitted
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
3 garlic cloves, crushed
salt
freshly ground black pepper
2 tablespoons finely chopped flat-leaf parsley
2 hard-boiled eggs, sliced

Method

  1. Place the tomatoes, onion and olives in a bowl. To make a dressing for the salad, whisk together the olive oil, vinegar and garlic. Season with salt and pepper, then pour over the salad and toss lightly. Garnish with parsley and hard-boiled eggs.
