In this recipe from Algeria, haroset – or rhailek, as it is usually called – consists of chopped dates simmered in red wine, mixed with chopped nuts and a dash of cinnamon and nutmeg.

Ingredients

Quantity Ingredient
225g dates, pitted and chopped
175ml sweet red dessert wine
50g blanched almonds, finely chopped
50g freshly shelled walnuts, finely chopped
1/4 teaspoon ground cinnamon
grinding of nutmeg

Method

  1. Place the dates and wine in a saucepan and simmer for 7-8 minutes, stirring constantly, until the mixture has the consistency of jam, adding a little more wine or water if necessary. Remove from the heat and set aside to cool. Add the nuts and spices and mix well. Will keep in the refrigerator for up to 2 days.
