Ashkenazi matzo meal fritters

These deliciously light fritters are traditionally served for Passover. Similar fritters called friteches are made by Sephardic Jews from Tunisia, except they are soaked in sugar syrup, rather than being dusted in sugar.

Ingredients

Quantity Ingredient
4 eggs, separated
4 tablespoons fine matzo meal
olive oil, for frying
icing sugar, for dusting

Method

  1. Beat the egg whites until they are stiff. In a separate bowl beat the egg yolks lightly and fold into the egg whites. Sprinkle the matzo meal over the top and, using a rubber spatula, lightly fold into the mixture.
  2. Heat a thin layer of oil in a heavy frying pan and drop in heaped tablespoonfuls of the batter. Cook over a moderate heat until the fritters are golden on both sides, then drain on paper towels. Serve hot, dusted with icing sugar.
