Traditionally served for Purim, these little walnut-sized biscuits are almost cake-like and have a wonderful flavour. If candied orange peel is unavailable you can use mixed peel instead.

Ingredients

Quantity Ingredient
250g wholemeal flour
1/2 teaspoon baking powder
1/4 teaspoon bicarbonate of soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground mixed spice
1/2 teaspoon ground cardamom
1/2 teaspoon freshly ground black pepper
freshly grated nutmeg
100g butter
75g sugar
1 egg yolk
6 tablespoons molasses or black treacle
6 tablespoons brandy
25g raw almonds, finely ground in a blender or food processor
3 tablespoons finely chopped candied orange peel
1/2 lemon, finely grated rind
icing sugar, for dusting

Method

  1. Si‡ft the flour, baking powder, baking soda and spices together into a bowl.
  2. Beat the butter and sugar together until light and fluffŠy. Add the egg yolk and mix well, followed by the molasses and brandy. Stir in the almonds, candied orange peel and lemon rind. Gradually add the flour mixture to make a very so‡ft dough.
  3. Shape the dough into small balls about 2cm in diameter and flatten slightly. Arrange on a well-greased baking sheet and bake in a preheated 160°C oven for 20 minutes or until they are golden brown. Remove from the oven and allow to cool on wire wracks. Dust with icing sugar.
