No Jewish New Year would be complete without a honey cake on the table. Leiker (or lekakh or lekeh) literally means ‘a portion’ and represents the wish that everyone should have their own abundant portion in the year to come. Honey cake is also served for other festive occasions, especially Purim, weddings and circumcisions. There are many different recipes for honey cake in the Ashkenazi world: some are light and spongy, others are enriched with sour cream. This one from Poland is more dense but has a delicious fl€avour, and is very good on its own or spread with butter.

Ingredients

175g wholemeal flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/4 teaspoon mixed spice
1/4 teaspoon ground cloves
4 eggs, separated
50g caster sugar
175g honey
3 tablespoons sunflower oil
2 teaspoons instant coffee, dissolved in 75ml hot water
40g freshly shelled walnuts, coarsely chopped
50g sultanas

Method

  1. Grease a 2lb loaf tin and dust with flour.
  2. Sift the flour, baking powder, bicarbonate of soda and spices together into a bowl. Beat the egg yolks with the sugar until light and creamy. Add the honey, oil and coffee and mix well. Add the flour, baking powder, bicarbonate of soda and spices and mix again. Stir in the walnuts and sultanas. In another bowl, whisk the egg whites to stiff peaks, then gently fold into the mixture.
  3. Pour the batter into the prepared tin and bake in a preheated 180°C oven for 1 hour or until a knife inserted into the centre comes out clean. Remove from the oven, unclip the tin and allow the cake to cool for 5 minutes. Turn out onto a wire rack and set aside to cool completely. Wrap in foil and keep for a day or two before serving.
