Little cheese omelettes

These delicious little fritters or omelettes are traditionally served for Shavuot. They also make a delicious lunch with lightly toasted pita bread, a green salad and olives on the side.

Ingredients

Quantity Ingredient
3 large eggs
1-2 garlic cloves, crushed
225g feta cheese, crumbled
1/4 teaspoon ground allspice
freshly ground black pepper
extra virgin olive oil, for frying

Method

  1. Beat the eggs in a bowl and add the garlic, feta and allspice. Mix well and season with pepper. Cook the omelettes in batches: heat a thin layer of olive oil in a heavy frying pan, then add tablespoonfuls of the mixture and flatten with the back of a spoon. Cook over a moderate heat until golden on both sides. Repeat until all the omelettes are cooked, adding more oil to the pan as necessary. Serve hot.
