No Jewish cookbook would be complete without kartoffel latkes, the potato pancakes traditionally made for Chanukah.

Ingredients

Quantity Ingredient
675g potatoes, coarsely grated
1 small apple, coarsely grated
1 medium onion, finely chopped
2 large eggs, lightly beaten
salt
freshly ground black pepper
olive oil, for shallow-frying

Method

  1. Mix the potatoes, apple, onion and eggs together well. Season with salt and pepper. Heat a thin layer of oil in a heavy frying pan. Working in batches, drop in heaped tablespoonfuls of the mixture and flatten with a fork. Cook over a gentle heat until golden on both sides, then drain on paper towels. Serve hot.
