All kinds of kugels (sweet or savoury puddings) are made in Ashkenazi households, especially with potatoes, apples or lokshen (vermicelli). Potato kugel can be made with grated or mashed potatoes. Some cooks add a little grated carrot or apple, others like to thicken the kugel with a little flour or matzo meal. Potato kugel can either be baked in the oven or slowly cooked in a large heavy frying pan on top of the stove until it is crisp and golden on both sides. Traditionally, kugels are served for the Sabbath and for Sukkot.

Ingredients

Quantity Ingredient
900g potatoes, peeled and grated
2 large carrots, grated
2 medium onions, grated
3 eggs, beaten
salt
freshly ground black pepper
4 tablespoons melted butter

Method

  1. Place the potatoes, carrots, onions and eggs in a large bowl and mix well. Season with salt and pepper.
  2. Pour half of the butter into a large shallow baking dish and swirl it around so the base and sides of the dish are well coated. Tip in the potato mixture and drizzle over the remaining butter.
  3. Bake the kugel in a preheated 180°C oven for 50–60 minutes or until the top is nicely browned. Serve hot.
