Wholemeal spaghetti with leeks, peppers and cherry tomatoes

Only made in Venice and Mantua, bigoli is a spaghetti-like pasta made from wholemeal flour, eggs, a little warm water and salt. Traditionally the pasta dough is not rolled, but forced through a press called a bigolaro and comes out the other end as long thick strands of hollow spaghetti. Commercial wholemeal spaghetti may be used instead or, if you prefer, you can use durum wheat spaghetti.

Ingredients

Quantity Ingredient
3 tablespoons extra virgin olive oil
3 garlic cloves, finely chopped
2 leeks, white part only, trimmed and thinly sliced
2 red or green peppers, cored, deseeded and cut into strips
450g very ripe cherry tomatoes, cut in half
75g black and green olives, pitted and sliced
8 torn basil leaves
salt
freshly ground black pepper
450g wholemeal or 100% durum wheat spaghetti
1-2 tablespoons butter, cut into pieces
freshly grated parmesan cheese, to serve

Method

  1. Heat the olive oil in a large frying pan and cook the garlic and leeks over a moderate heat until they start to turn golden. Add the peppers, cover and simmer for 20 minutes or until they are tender. Add the tomatoes and olives and cook for 5 more minutes. Add the basil and season with salt and pepper.
  2. Meanwhile, cook the spaghetti in plenty of lightly salted boiling water until tender but still firm. Drain and transfer to a warmed serving bowl. Dot with butter and pour over the sauce. Serve at once, with grated parmesan on the side.
