This staple of the Ashkenazi kitchen is usually served for Friday night dinner, and for the New Year – its sweetness, and the resemblance of the carrots to gold coins, symbolize the hope of a prosperous year to come.

Ingredients

Quantity Ingredient
450g carrots
2 tablespoons butter
2 teaspoons flour
1 tablespoon sugar
pinch ground cinnamon
salt
freshly ground black pepper
125ml hot water

Method

  1. Trim the ends of the carrots, then cut into 5mm rounds.
  2. Melt the butter in a heavy saucepan and add the carrots. Mix well, so they are evenly coated in butter. Stir in the flour and cook for 1 minute without browning. Add the sugar and cinnamon and season to taste. Add the hot water and simmer, stirring constantly, for 5 minutes or until the carrots are tender and the sauce has thickened. Serve hot.
