Cauliflower simmered with onions, tomatoes and cumin

In this recipe the cauliflower is first steamed, then simmered in a delicious onion and tomato sauce strongly spiced with harissa.

Ingredients

Quantity Ingredient
1 medium cauliflower
3 tablespoons extra virgin olive oil
2 medium onions, chopped
4 ripe tomatoes, peeled, deseeded and chopped
1 teaspoon ground cumin
1-2 teaspoons Sabbath artichoke salad with fennel and harissa, harissa only, or to taste
salt

Method

  1. Trim the stalk off the cauliflower, then break into florets. Steam for 5–6 minutes or until just tender.
  2. Heat the olive oil in a large frying pan and add the onions. Cook over a moderate heat until they are softened. Add the tomatoes, cumin, harissa and season with salt. Cook for further 10 minutes, then add the cauliflower florets and simmer for a few more minutes to blend the flavours. Serve hot.
