This dish of mushrooms sauteed in butter with onion, paprika and sour cream is usually served with galuskas (dumplings) or rice, but it also makes a very good stuffing for pancakes. As this is such a simple recipe, using the best-quality mushrooms you can find – and, if possible, Hungarian paprika – will make all the difference.

Ingredients

Quantity Ingredient
450g mushrooms
3 tablespoons butter
1 medium onion, finely chopped
1 teaspoon paprika, ideally Hungarian
salt
6 tablespoons sour cream or smetana

Method

  1. Carefully wipe the mushrooms clean, then slice them fairly thinly.
  2. Melt the butter in a heavy frying pan and add the onion. Cook over a moderate heat until it has so­ftened. Add the mushrooms and paprika and mix well. Season with salt, then cook over a moderate heat until the mushrooms are tender and the liquid has reduced. Stir in the sour cream and heat through. Serve at once.
