Sweet aubergine fritters

These lovely fritters are traditionally made for Rosh Hashanah. They are usually served with a dusting of sugar – to symbolize a sweet New Year. Sometimes the fritters are layered with a sprinkling of sugar and baked in the oven until the sugar is caramelized. Similar fritters can also be made with slices of pumpkin.

Ingredients

Quantity Ingredient
4 medium aubergines, about 900g
salt
2 eggs, lightly beaten
olive oil, for deep-frying
sugar, for dusting

Method

  1. Trim the ends of the aubergines and cut into rounds about 5mm. Sprinkle with salt and set in a colander for 1 hour to release the bitter juices. Wash off the salt and pat dry.
  2. Dip the slices into beaten egg and deep-fry in batches in hot oil until they are golden on both sides. Drain on paper towels. Serve hot, dusted with sugar.
