This recipe makes a delicious side dish. The onions should be cooked very slowly until they are meltingly soft, but not browned. The raisins add a lovely touch of sweetness.

Ingredients

Quantity Ingredient
3 tablespoons extra virgin olive oil
1/2 teaspoon ground turmeric
3 large white or brown onions, thinly sliced
salt
freshly ground black pepper
75g seedless black raisins, soaked for 20 minutes in hot water and drained

Method

  1. Heat the olive oil in a large frying pan and stir in the turmeric. Add the onions and mix well so they are evenly coated in oil. Season with salt and pepper. Cover and simmer for 30 minutes or until they are very so€ft, stirring from time to time so they do not stick. Add the raisins and simmer for 5 more minutes.
