Note that mescal is not the same as tequila. Technically, tequila is a form of mescal and most Mexicans regard some tequila brands as created only for tourists. Mescal can be made from 11 types of agave native to the state of Oaxaca. The flavours are as diverse as grapes in wine-making. Our excitement for Latin culture has led us to the creation of many wonderful cocktails. In this chapter I have taken a less typical approach, and have used exotic fruits and flavours designed to highlight the flavours of Mexico with abandon. Let your hair down and turn up the music.
