The scent of vanilla beans is heavenly and will fill your kitchen while you’re preparing these dried shards. They’re simple to prepare and add a hit of vanilla as well as a lovely textural contrast to desserts, where vanilla is the hero.

Ingredients

Quantity Ingredient
4 vanilla beans
Stock syrup, for dipping

Method

  1. Preheat the oven to 80°C. Set a wire rack over a tray lined with baking paper.
  2. Cut the vanilla beans into fine shards, dip them into the stock syrup and arrange on the prepared rack.
  3. Place in the oven to dry for 4 hours, or until crisp.
  4. Store in an airtight container for up to 6 months.

Paul’s tip

  • These vanilla beans can also be dried overnight in a food dehydrator.
