A garlic-flavoured mayonnaise, this is a good base for several of the recipes used throughout this book, but it’s also great on its own. You can add chilli or lime, or combine it with other sauces, such as adobo, for a creamy spiced sauce – a perfect accompaniment to tacos or quesadillas.

Ingredients

Quantity Ingredient
3 large egg yolks
2 teaspoons cider vinegar
3 garlic cloves, grated
2 teaspoons dijon mustard
200ml vegetable oil
125ml peanut oil
1/2 lemon, juiced
2 teaspoons sea salt

Method

  1. Whisk the yolks, vinegar, garlic and mustard together in a medium bowl using an electric mixer, until smooth and creamy.
  2. Continuously whisking, gradually pour in the oils, one at a time, in thin streams, until they are fully incorporated and the sauce is smooth and thick. Add the lemon juice and season with the salt. If the sauce is too thick, add a little warm water to help achieve the desired consistency.
